A course for employees working with food in canteens and kitchens. Emphasis will be on practical advice, how to handle food and a deeper understanding on microbiology. In a world where food diseases are increasing it is important that everyone that handles food knows how to prevent contamination, especially when it comes to serving food to vulnerable groups (e.g. people with weakened immune system, elderly and children).
After participating in the course participants should be more aware of the biggest risks associated with food handling and how they are prevented.
Course content:
Food handling. What are the risks? How do we prevent cross contamination?
Bacteria and pathogenic microorganisms. Behaviour and growth. Food infections/food poisoning.
Personal hygiene. Hand washing. Correct use of gloves.
Cleaning and hygiene. Are we cleaning correctly and in the right locations?
Food waste. How do we reuse food? Safety when it comes to reusing food.
Project work.
